Two of the country’s most acclaimed pizza masters are joining forces in Jersey City.
Neapolitan pizza god Daniele Uditi — of Los Angeles’ Pizzana — will join chef Dan Richer at Razza for a special pop-up dinner this Wednesday.
The Naples-born Uditi enjoys a cult-like following in LA thanks to his exceptional pizzas which the LA Times calls, “the real thing.”
“The cacio e pepe pizza is a small miracle: crisp crust, pungent cheese and a showering of black pepper, a near-exact duplication of the flavor of the pasta’s particular tang even before your tongue hits a stripe of cream, which lends a bit of the pasta’s texture.”
Pizzana dishes will be available a la carte on Wednesday (along with Razza’s traditional menu). They’ll include some of Uditi’s signature pies and dishes like:
- Neo-Margherita: San Marzano dop “polpa,” fior di latte (cheese), basil crumb, parmigiano, and basil
- Cacio e Pepe: Fior di latte, provoloncino di agerola, parmigiano crema, and cracked black pepper.
- Diavola: Fior di latte, spicy salami, charred shallot, nduja walnut romesco, and honey.
- Puntarelle Ceasar Salad: Little gem (lettuce), fried caper, pizza crouton, parmigiano, and calabrian chile Caesar dressing.
- Carciofi Arrostiti: Charred artichoke heart, fried baby artichoke, toasted pine nut, parmigiano, lemon, and olive oil.
- Broccolo Romano: Wood-fired romanesco, blistered cherry tomato, caper, olive, oregano, calabrian chile, and bread crumbs.

Tables will be available on a first-come, first-served basis from 5pm to 10pm. (In other words, you better go line up now).
