Onion Blue Cheese Quiche

On the first day of Jersey City’s stay-at-home order, recently furloughed chef Thomaz Carmo started working on a recipe for sourdough bread. After weeks of practice, Thomaz and his wife, Vivian, struck gold and discovered the recipe that would help them launch Our Breads and Pies.

Both natives of Brazil, Vivian and Thomaz started promoting their newfound business within Jersey City’s Brazilian community and received great feedback. Neighbors then encouraged them to extend their breads through the Nextdoor app. The rest — as they say — is history. 

“Today, 50% of our orders are from our local community, not only from Brazilians,” says Vivian. The Jersey City-based, husband-and-wife team offer a mix of breads, quiche, savory pies, focaccia, and other carb-based treats. Some of their offerings include shrimp scampi pie and chicken and cheddar pie.

From French quiche to Brazilian-style chicken pot pie

With over 15 years of experience as chef de cuisine at a multinational hotel chain, Thomaz has traveled the world and learned classic recipes from different countries.

“On our menu, for instance, there are influences from Ireland (Guinness pie), France (Lorraine quiche), and Brazilian-style Chicken Pot Pie,” says Vivian.

We sampled their Spinach & Mushroom Quiche, which is a delightful blend of wild mushrooms with spinach and cheese. Meanwhile, their rustic Tomato & Basil Focaccia is crispy on the outside and wonderfully chewy on the inside.

The Carmo’s welcome all types of orders beyond what’s on their current menu. We’ve cooked an Indian-inspired spicy veggie quiche as well as meatballs and lasagna, says Vivian. Brazilian cuisine like pao de queijo (cheese bread) and moqueca (seafood stew) can also be placed as special orders.

They’re currently offering a variety of specials for the 4th of July. (Orders must be placed by end of day Wednesday for delivery on Thursday or Friday).

“Baking bread or any other treat has always been about one simple idea: make someone’s day a little happier,” says Vivian.

Our Breads and Pies is currently making free deliveries to Harsimus Cove and downtown Jersey City. Deliveries to other parts of Jersey City cost $5, whereas deliveries outside of the city cost $10.
